Glazed Pina Colada Bars
30 min
1 hr 30 min

1 cup all-purpose flour

1/2 cup Land O Lakes® Butter, softened

2 tablespoons sugar

1/2 cup firmly packed brown sugar

2 large Land O Lakes® Eggs

1/2 teaspoon salt

1/2 teaspoon rum extract

3/4 cup sweetened flaked coconut

1/2 cup macadamia nuts, chopped

1 (8-ounce) can crushed pineapple in juice, well-drained, reserve juice

1 cup powdered sugar

1/2 teaspoon rum extract

4 to 6 teaspoons reserved pineapple juice

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

Combine flour, butter and sugar in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press onto bottom of ungreased 8-inch square baking pan. Bake for 12 to 17 minutes or until set but not brown.

  3. STEP 3

Combine brown sugar, eggs, salt and 1/2 teaspoon rum extract in bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in coconut, nuts and pineapple. Spread over hot, partially baked crust.

  4. STEP 4

Bake for 25 to 30 minutes or until lightly browned and filling is set. Cool completely.

  5. STEP 5

Combine sugar, rum extract and enough pineapple juice for desired glazing consistency in bowl. Drizzle over cooled bars; cut into bars.

I made these bars for a Cinco De Mayo celebration at work. OMG...these were so easy and too good to be true!!! I substituted coconut extract for the rum extract due to work environment restrictions. But the bars were delicious and gone very quickly.
