Ingredients

Cilantro Lime Sour Cream

1/2 cup
sour cream
1 tablespoon
chopped fresh cilantro leaves
2 teaspoons
fresh lime juice

Quesadillas

12 (3/4-ounce) slices
Land O Lakes® Deli American
2 cups
cooked shredded chicken
1/2 cup
barbecue sauce
1 tablespoon
chopped fresh cilantro leaves
1 tablespoon
finely chopped red onion
4 (10-inch)
flour tortillas

Directions

  1. Combine all cilantro lime sour cream ingredients in bowl; set aside.
  2. Cut 4 slices cheese in half; set aside.
  3. Heat gas grill to medium or charcoal grill until coals are ash white.
  4. Combine chicken, barbecue sauce, cilantro and red onion in bowl.
  5. Assemble quesadillas by placing 2 slices cheese onto one-half of each tortilla. Top with 1/4 chicken mixture and 2 half slices cheese. Fold tortillas over filling.
  6. Place onto grill. Grill, turning once, 4-6 minutes or until tortillas start to crisp and cheese is melted.
  7. Serve with cilantro lime sour cream.

These were very good. I gave them 5 stars especially for the simplicity of them. The sour cream blend was delicious! I was looking for something easy to do with my leftover rotisserie chicken that wasn't a soup recipe and these were just perfect- finished up my leftover and were so easy!

There were very simple, and super good. I did use shredded Montery jack cheese and diced up some green peppers. My oldest son is a picky eater and these were an absolute hit! I just made these last weekend and I have requests for them again this coming week. Yummy.
