Try this twist on family favorite quesadillas by taking them outdoors. Grilling adds a nice hint of smokiness.
Cilantro Lime Sour Cream
1/2 cup sour cream
1 tablespoon chopped fresh cilantro leaves
2 teaspoons fresh lime juice
12 (3/4-ounce) slices Land O Lakes® Deli American
2 cups cooked shredded chicken
1/2 cup barbecue sauce
1 tablespoon finely chopped red onion
4 (10-inch) flour tortillas
Combine all cilantro lime sour cream ingredients in bowl; set aside.
Cut 4 slices cheese in half; set aside.
Heat gas grill to medium or charcoal grill until coals are ash white.
Combine chicken, barbecue sauce, cilantro and red onion in bowl.
Assemble quesadillas by placing 2 slices cheese onto one-half of each tortilla. Top with 1/4 chicken mixture and 2 half slices cheese. Fold tortillas over filling.
Place onto grill. Grill, turning once, 4-6 minutes or until tortillas start to crisp and cheese is melted.
Serve with cilantro lime sour cream.

These were very good. I gave them 5 stars especially for the simplicity of them. The sour cream blend was delicious! I was looking for something easy to do with my leftover rotisserie chicken that wasn't a soup recipe and these were just perfect- finished up my leftover and were so easy!
There were very simple, and super good. I did use shredded Montery jack cheese and diced up some green peppers. My oldest son is a picky eater and these were an absolute hit! I just made these last weekend and I have requests for them again this coming week. Yummy.
