8 small red potatoes
4 tablespoons Land O Lakes® Butter
1 tablespoon finely chopped fresh garlic
1 teaspoon chopped fresh parsley
1 pound boneless skinless chicken breasts
1 (12-ounce) package fresh pre-trimmed green beans
Pierce potatoes with fork in 2-3 places. Microwave 3-5 minutes or until just beginning to soften.
Melt 3 tablespoons butter in 12-inch skillet over medium heat sizzling. Add garlic and parsley; sauté 1 minute until garlic is softened.
Add chicken; cook, turning once, 13-18 minutes or until internal temperature reaches 165°F, chicken is golden brown on both sides and juices run clear when pierced with a fork. Remove from skillet; keep warm. Wipe out skillet.
Melt remaining 1 tablespoon butter in same skillet. Cut potatoes into bite-sized wedges; add potatoes and green beans to skillet. Cover; cook over medium-high heat, stirring occasionally, 8-10 minutes or until potatoes are golden brown and green beans are tender.
Serve chicken with potatoes and green beans.

This is a keeper! Great flavor. I use chicken tenders and mix up the veggies - my family likes to add sliced red bell peppers, onions, mushrooms, peas---whatever is handy.
I made this recipe a couple of times . Everybody loves it !!!! I have changed it up this last time , I add a bag of frozen veggies ( red potatoes , green beans, broccoli , roasted red peppers) that I got from the frozen food box truck guy that delivers to us . Thanks for sharing your recipe !!!
