3 cups shredded bran cereal
1/2 cup Land O Lakes® Butter, melted
1 cup boiling water
2 cups buttermilk
1/4 cup molasses
2 large Land O Lakes® Eggs
1 1/4 cups all-purpose flour
1 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 (10-ounce) package cinnamon-flavored baking chips
Autumn or Halloween decorator sprinkles, if desired
*Substitute 2 tablespoons vinegar or lemon juice and enough milk to equal 2 cups. Let stand 10 minutes.
Place cereal and butter in large bowl. Add boiling water; stir. Set aside to cool.
Combine buttermilk, molasses and eggs in small bowl with whisk. Add buttermilk mixture to cereal mixture; stir to combine. Add all remaining ingredients except cinnamon chips and decorator sprinkles. Stir just until blended. Stir in baking chips. Cover with plastic food wrap. Allow mixture to stand 20 minutes.
Heat oven to 400ºF.
Divide batter among 36 paper-lined mini muffin cups. Sprinkle each cup with decorator sprinkles, if desired. Bake 9-12 minutes or until toothpick inserted comes out clean. Cool 15 minutes. Remove from pans. Cool completely.
Muffins can be baked in 36 (2 1/4-inch) paper-lined muffin cups. Bake for 18 to 22 minutes or until toothpick inserted comes out clean.
