Ingredients

1 (1/4-ounce) package
active dry yeast
3/4 cup
warm (105-115ºF) water
2 1/2 to 2 3/4 cups
all-purpose flour
1/2 cup
lukewarm mashed potatoes
1/3 cup
Land O Lakes® Butter, softened
1/3 cup
honey
1
large Land O Lakes® Egg
3/4 teaspoon
salt
1 cup
whole wheat flour
Land O Lakes® Butter, if desired

Directions

  1. Dissolve yeast in warm water in bowl. Add 1 cup all purpose flour and all remaining ingredients except whole wheat flour. Beat at medium speed, scraping bowl often, until smooth. Stir in whole wheat flour and enough remaining all-purpose flour to make a soft dough. Turn dough onto lightly floured surface; knead about 5 minutes or until smooth and elastic.
  2. Place into greased bowl, turn greased-side up. Cover bowl tightly; refrigerate at least 8 hours but no longer than 5 days. Punch down dough. Shape into 20 balls with floured hands; place into greased 13x9-inch baking pan. Cover; let rise 1 1/2-2 hours until double in size.
  3. Heat oven to 375°F. Bake 25-30 minutes or until golden brown. Brush tops of rolls with butter, if desired.

Recipe Tips

To bake rolls immediately, prepare and shape as directed above. Let rise in warm place 45-60 minutes or until double in size. Bake as directed.

I've made these a couple of times using the exact recipe and they come out delicious. I'm going to make them tomorrow and try using white whole wheat flour instead and see how it comes out. Thanks for a great recipe!

I didn't have whole wheat flour so just used bread flour. I increased mashed potatoes to one cup and honey to 1/2 cup. The whole family including 3 picky grandkids loved them. They are wonderful and light using the bread flour. Will definitely make these for Christmas dinner for all 3 families.
