Herbed Mashed Cauliflower

Ingredients

1 medium head (1 1/2 pounds)
cauliflower, cut into florets
2 tablespoons
Land O Lakes® Butter
1/4 teaspoon
shredded Italian seasoning
1 large (about 1/2 cup)
shallot, finely chopped
1/2 teaspoon
salt
1 tablespoon
chopped chives

Directions

  1. Place cauliflower into 3-quart saucepan; add water to cover. Bring to a boil. Reduce heat to medium low; simmer 6-10 minutes or until cauliflower is crisply tender.
  2. Reserve 1/2 cup of the cooking liquid. Drain cauliflower. Place cauliflower into food processor bowl fitted with metal blade. Process until smooth, adding reserved liquid by the tablespoon, if necessary.
  3. Melt butter in same saucepan over medium heat until sizzling. Add shallots; cook 1-5 minutes or until caramelized. Add cooked shallot mixture and salt to cauliflower; pulse lightly.
  4. Spoon cauliflower mixture into serving bowl; sprinkle with chives.
