Italian Shrimp Caprese Pasta

Ingredients

8 ounces uncooked dried linguine

1/4 cup Land O Lakes® Butter

4 teaspoons finely chopped fresh garlic

1/2 teaspoon dried oregano

1 pound uncooked medium shrimp, peeled, deveined

1 1/2 teaspoons lemon juice

1 cup grape tomatoes, halved

1 cup fresh mozzarella pearls or cubed mozzarella

1/4 cup chopped fresh basil leaves

1/4 cup shredded Parmesan cheese

How to make

  1. STEP 1

    Cook pasta according to package directions; drain.

  2. STEP 2

    Melt butter in 12-inch skillet over medium-low heat until sizzling. Add garlic and oregano; sauté 1 minute or until softened.

  3. STEP 3

    Add shrimp; sauté, stirring occasionally, 5-7 minutes or until shrimp turn pink. Add cooked pasta, lemon juice, tomatoes, mozzarella and basil; stir until coated and heated through. Sprinkle with Parmesan cheese.

I made this recipe a while ago using Land O Lakes Italian Herb Saute cubes, which are apparently not sold anymore. I was so happy to find this recipe that gives me the ingredients I need to make it!
