Best Ever Cappuccino Butter Cookies

1/4 cup hot water

1 tablespoon instant coffee granules

1 cup Land O Lakes® Butter, softened

1 cup sugar

1 large Land O Lakes® Egg

2 1/2 cups all-purpose flour

1 teaspoon baking powder


1 (12-ounce) package (2 cups) semi-sweet chocolate chips

2 tablespoons shortening

How to make

  1. STEP 1

    Combine hot water and coffee granules in bowl; stir until coffee granules are dissolved.

  2. STEP 2

    Combine 1 cup butter, sugar and egg in another bowl. Beat at medium speed, until creamy. Add coffee; continue beating, scraping bowl often, until well mixed. Add flour and baking powder; beat at low speed, scraping bowl often, until well mixed.

  3. STEP 3

    Divide dough into thirds. Shape each third into a ball; flatten slightly. Wrap each in plastic food wrap. Refrigerate 2-3 hours or until firm.

    Heat oven to 400°F.

    Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8- to 1/4-inch thickness. Cut with cookie cutters. Place, 1 inch apart, onto parchment-lined cookie sheets. Bake 6-10 minutes or until edges are lightly browned. Cool completely.

  6. STEP 6

    Melt chocolate and shortening in 1-quart saucepan over low heat, stirring occasionally, 4-6 minutes or until melted.

  7. STEP 7

    Dip half of each cookie into chocolate. Place onto prepared cookie sheets; refrigerate until chocolate is firm. Store refrigerated.

Tip #1

Dress these cookies up even more by dipping in both white and dark chocolate, then finishing with a sprinkle of flaky sea salt.
