1/3 cup honey
2 tablespoons Land O Lakes® Butter
1/2 cup milk
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 large Land O Lakes® Egg
1 tablespoon Land O Lakes® Butter, melted
2 tablespoons honey
Heat oven to 350°F.
Combine 1/3 cup honey and 2 tablespoons butter in 1-quart saucepan. Cook over medium heat, stirring occasionally, 2-5 minutes or until butter is melted. Stir in milk until well mixed; set aside to cool.
Combine flour, baking powder, salt and baking soda in bowl. Stir egg into cooled milk mixture with whisk. Add milk mixture to flour mixture; stir just until moistened. (Batter will be slightly lumpy.)
Spoon batter into greased mini muffin pans. Bake 10-13 minutes or until lightly browned. Let stand 5 minutes; remove from pans.
Combine all glaze ingredients in bowl. Dip top of each warm muffin into glaze; place onto cooling rack.
Batter can be spooned into greased 12-cup regular-size muffin pan. Bake 12-17 minutes or until lightly browned. Let stand 5 minutes; remove from pan.
