Microwave Caramel Bars

4 1/2 (5x2 1/2-inch) whole graham crackers

1 cup graham cracker crumbs

3/4 cup sugar

1/2 cup firmly packed brown sugar

1/2 cup Land O Lakes® Butter

1/3 cup milk

1/2 cup semi-sweet chocolate chips

1/4 cup peanut butter

1/4 cup chopped peanuts

How to make

  1. STEP 1

    Line bottom of buttered 9-inch square pan with whole graham crackers; set aside.

  2. STEP 2

    Combine crushed graham crackers, sugar, brown sugar, butter and milk in 3-quart bowl or dish. Microwave, stirring after 1 minute, 2-2 1/2 minutes or until mixture comes to a full boil. Continue microwaving 5 minutes (mixture will be very hot). Immediately pour mixture evenly over whole crackers in pan.

  3. STEP 3

    Combine chocolate chips and peanut butter in bowl. Microwave 45-60 seconds or until chocolate is softened. Stir until smooth and melted. Spread evenly over caramel mixture; sprinkle with peanuts.

  4. STEP 4

    Refrigerate bars 1 hour or until chocolate is set. Store refrigerated.

The taste is absolutely heavenly. The problem is that if you do not have a pan with 90 degree angles/sides, then the liquid caramel seeps underneath the unlevel graham crackers. Also, it needs to be refrigerated when not in use to keep the consistency thick enough to not melt apart.
