3 (3/4-ounce) slices Land O Lakes® Deli American chopped
1 (24-ounce) package refrigerated prepared mashed potatoes
1 large Land O Lakes® Egg
1 pound lean ground beef
1 small (1/2 cup) onion, chopped
1 (14.75-ounce) can cream-style corn
1 (1-ounce) package taco seasoning mix
Heat oven to 375°F.
Combine cheese, mashed potatoes and egg in bowl; mix well. Set aside.
Cook ground beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, 4-5 minutes or until beef is browned. Drain off fat. Stir in corn and taco seasoning. Spoon hot beef mixture into ungreased 8-inch square baking pan; top with potato mixture.
Bake 30-35 minutes or until heated through.
To lower sodium in this recipe, substitute reduce-sodium taco seasoning mix.

With boys that are teens and toddlers; finding something they'll all eat can be a challenge. I did add more cheese to the potatoes and sprinkle more on top. I also used Mexican blend cheese.Everyone ate it and the teens took seconds-they all loved it! Will make again.
