Ingredients

1 cup
all-purpose flour
2 tablespoons
firmly packed brown sugar
2 teaspoons
baking powder
1 1/2 teaspoons
pumpkin pie spice*
1/4 teaspoon
salt
1 cup
milk
1/2 cup
mashed cooked pumpkin**
1
large Land O Lakes® Egg
2 tablespoons
Land O Lakes® Butter, melted
 
Chocolate chips, if desired
Land O Lakes® Butter with Canola Oil
Maple syrup
 
*Substitute 3/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger and 1/8 teaspoon each ground cloves and nutmeg.
**Substitute canned pumpkin.

Directions

  1. Combine flour, brown sugar, baking powder, pumpkin pie spice and salt in bowl. Set aside.
  2. Combine milk, pumpkin, egg and melted butter in another bowl; mix well. Pour milk mixture into flour mixture; mix well.
  3. Heat griddle to 350ºF or until drops of water sizzle.
  4. Spoon 1/4 cup batter onto griddle for each pancake; spread with back of spoon to 4-inch circle. Use spoon to swirl batter to form pumpkin stem.
  5. Cook 2-4 minutes or until bubbles form. Turn; continue cooking 2-3 minutes or until lightly browned and cooked through.
  6. Place chocolate chips onto warm pancakes to form jack-o’-lantern face, if desired. Serve with butter and syrup.

Recipe Tips

Lightly grease griddle with canola oil or butter, if desired.
