Fresh pear flavor is preserved in this delicate spread for breakfast breads.
2 pounds (8 medium) pears, peeled, cored, quartered
2 1/4 cups sugar
1 (8-ounce) can crushed pineapple in pineapple juice
1 tablespoon lemon juice
1/2 teaspoon freshly grated lemon zest

I also made a double batch, it came out to 12 pints. It's so delicious!!
I made a double batch and it worked perfect. I boiled it longer than called for- so this is a judgment call.
