2 large Land O Lakes® Eggs
Toppings (if desired)
Chopped bell pepper
Chopped cooked bacon
Cooked sausage crumbles
Add 1 teaspoon butter 12- to 16-ounce microwave-safe coffee cup. Crack eggs into cup. Beat with fork until well mixed.
Microwave 1 minute. Sprinkle with desired toppings. Microwave 30-60 seconds or until egg is cooked through. Season with salt and pepper, if desired.

I used my favorite sausage and American cheese. This is fabulous! Even your bigger kids can do this, maybe 8 and up. I don't bother with the stovetop version just for myself anymore. This is so delicious!

I mixed the eggs, half&half, cheese, bacon crumbles and diced Ramps (wild onion with bulb and leaves); cooked in microwave for 3.5 minutes on high. I used rendered bacon grease instead of spray oil. This was great.
