Ingredients

Cookie

1 cup
Land O Lakes® Butter, softened
2/3 cup
firmly packed brown sugar
1/3 cup
sugar
1 cup
mashed cooked pumpkin*
1
large Land O Lakes® Egg
1 teaspoon
vanilla
2 cups
all-purpose flour
1 1/2 teaspoons
pumpkin pie spice or ground cinnamon
1 teaspoon
baking powder
1 teaspoon
baking soda
1/4 teaspoon
salt
1 cup
chopped walnuts

Frosting

2 cups
powdered sugar
1/4 cup
Land O Lakes® Butter, softened
1 (3-ounce) package
cream cheese, softened
1 teaspoon
vanilla
1/4 teaspoon
pumpkin pie spice or ground cinnamon
Walnut pieces, if desired
 
*Substitute 1 cup canned pumpkin.

Directions

  1. Heat oven to 350°F.
  2. Combine 1 cup butter, brown sugar and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add pumpkin, egg and 1 teaspoon vanilla. Continue beating until well mixed. Add flour, 1 1/2 teaspoons pumpkin pie spice, baking powder, baking soda and salt. Beat, scraping bowl often, until well mixed. Stir in 1 cup walnuts.
  3. Drop rounded teaspoonfuls of dough, 2 inches apart, onto ungreased cookie sheets. Bake 8-10 minutes or until set. Cool completely.
  4. Combine all frosting ingredients except walnut pieces in medium bowl. Beat at low speed, scraping bowl often, until smooth. Frost cooled cookies. Garnish with walnuts, if desired.

These cookies were delicious and very moist. The frosting really complements them. I added chopped pecans on top of the frosting. These cookies remind me of the pumpkin roll. Will be making them again for a holiday party at work.

I needed to bake some cookies for an event and happened to have a can of pumpkin that needed using as it was getting close to the "sell by" date. I checked the internet for pumpkin/walnut cookies and up came this wonderful Land O' Lakes site. I used the Pumpkin Walnut Cookies recipe and first loved the clearly printed double spaced ingredient page. It was so easy to follow. They came out just great! ...like little cakes with the soft middle. Although they are to give away, I sampled a few. Delicious. Today in searching to write this, I saw so many other things I can bake with pumpkin. I LOVE the Land O' Lakes weblite with the colorful pictures of the finished products. I will visit often as it is a trusted brand for many years. Thank you for this great find!

I made these with semi sweet chocolate chips and they were delish. I don't know why but they were even better the second day. Must be the flavors had a chance to meld together. Very cakelike but I liked them that way.

very flavorful and easy to make. Great basic ingredients. I like to substitute chopped hazelnuts instead of walnuts.
