Peanut Butter Chocolate Pudding

Ingredients

Pudding

1/4 cup Land O Lakes® Butter

1/4 cup creamy peanut butter

3 (1-ounce) squares semi-sweet baking chocolate, chopped

3 cups milk

1/4 cup sugar

3 large Land O Lakes® Eggs (yolks only)

3 tablespoons cornstarch

Toppings

Land O Lakes® Heavy Whipping Cream whipped

Chocolate shavings, if desired

How to make

  1. STEP 1

    Melt butter and peanut butter in saucepan over low heat 2-3 minutes or until melted. Add chocolate; continue cooking 1 minute or until smooth. Stir in milk. Increase heat to medium. Continue cooking 4-5 minutes or until bubbles begin to form around edges.

  2. STEP 2

    Combine sugar, egg yolks and cornstarch in bowl; beat with whisk. Stir small amount of hot milk mixture into egg mixture with whisk; mix well. Gradually add egg mixture to hot milk mixture. Cook over medium heat, stirring constantly, 1-2 minutes or until thickened.

  3. STEP 3

    Pour into individual serving dishes. Cover; refrigerate until cooled. Garnish with whipped cream and chocolate shavings, if desired.

This was a lovely recipe! Simple to make and delicious. I made it with only 2 egg yolks and substituted chocolate chips for the baking chocolate, with no adverse effects as far as I can tell. A heck of a lot cheaper and healthier than powdered pudding mix! We'll return to this one often.
