Ingredients

Crust

1 cup all-purpose flour

1/2 cup uncooked old-fashioned oats

1/2 cup firmly packed brown sugar

1/2 cup Land O Lakes® Butter softened

Filling

3/4 cup sugar

1 (15-ounce) can pumpkin

1 (12-ounce) can evaporated milk

2 large Land O Lakes® Eggs

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

Topping

1/2 cup firmly packed brown sugar

1/2 cup chopped pecans

Garnish

Land O Lakes® Heavy Whipping Cream sweetened, whipped, if desired

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine all crust ingredients in small bowl. Beat at low speed until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake 15 minutes.

  3. STEP 3

    Meanwhile, combine all filling ingredients in large bowl. Beat at medium speed until smooth; pour over crust. Continue baking 20 minutes.

  4. STEP 4

    Stir together 1/2 cup brown sugar and pecans in small bowl; sprinkle over filling. Continue baking 15-25 minutes or until knife inserted in center comes out clean. Cool completely.

  5. STEP 5

    Store refrigerated. Garnish with sweetened whipped cream, if desired.

I love pumpkin pie or anything with pumpkin, but this is special! Made for my husband and I and he asked me to make again as soon as it was gone!!! Will make it for thanksgiving next year using my fresh pumpkin. Also it was simple to make but tasted like a complicated recipie!!!
