Ingredients

Crust

1 cup
all-purpose flour
1/2 cup
uncooked old-fashioned oats
1/2 cup
firmly packed brown sugar
1/2 cup
Land O Lakes® Butter, softened

Filling

3/4 cup
sugar
1 (15-ounce) can
pumpkin
1 (12-ounce) can
evaporated milk
2
large Land O Lakes® Eggs
1 teaspoon
ground cinnamon
1/2 teaspoon
salt
1/2 teaspoon
ground ginger
1/4 teaspoon
ground cloves

Topping

1/2 cup
firmly packed brown sugar
1/2 cup
chopped pecans

Garnish

Land O Lakes® Heavy Whipping Cream, sweetened, whipped, if desired

Directions

  1. Heat oven to 350°F. Combine all crust ingredients in small bowl. Beat at low speed until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake for 15 minutes.
  2. Meanwhile, combine all filling ingredients in large bowl. Beat at medium speed until smooth; pour over crust. Continue baking 20 minutes.
  3. Stir together 1/2 cup brown sugar and pecans in small bowl; sprinkle over filling. Continue baking for 15-25 minutes or until knife inserted in center comes out clean. Cool completely. Store refrigerated. Garnish with sweetened whipped cream, if desired.

I love pumpkin pie or anything with pumpkin, but this is special! Made for my husband and I and he asked me to make again as soon as it was gone!!! Will make it for thanksgiving next year using my fresh pumpkin. Also it was simple to make but tasted like a complicated recipie!!!

Finally made this recipe a couple of weeks ago and decided it is a great way to make Pumpkin Pie for a crowd! I will be making this again for Thanksgiving. If you have family members (kids) that do not care for nuts, simply omit the topping but continue baking the additional 15 to 25 minutes until done.

These were very good! My boys loved them. They were very sweet so I may reduce the sugar when I make them again. I used fat free con. milk to help reduce the calories.

I've been making this recipe for years and it's the only dessert my son asks for every Thanksgiving. I just want to mention that my original recipe calls for 2T butter added to the topping. Also, I prepare the topping first in the food processor and then refrigerate it while I do the rest. It keeps from having to wash everything again.

This dessert is my family's favorite fall favorite. I originally found the recipe on a box of Land O Lakes butter. The recipe is perfect just the way it is. It's easy and can look elegant baked in a glass baking pan and served on a plate drizzled with a little caramel syrup. Add whipped cream and enjoy. Love it!
