1 1/2 cups pancake and baking mix
1 cup sour cream
1/4 cup chopped fresh chives
1/4 cup milk
1 large Land O Lakes® Egg, slightly beaten
1/4 teaspoon garlic powder
1/3 cup chopped pepperoni
*Substitute 4 teaspoons dried chives.
Heat oven to 400°F. Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
Combine all ingredients except pepperoni in bowl. Stir just until moistened. Gently stir in pepperoni.
Spoon batter into prepared muffin pan cups, filling each 3/4 full. Bake 15-17 minutes or until lightly browned. Cool 5 minutes; remove from pans.

These are so good! I made them for a puppy themed birthday party for our 3 year old and called them Puppy-roni muffins. They were a hit among the kids and adults, I served pizza sauce on the side for dipping. They were so moist and flavorful and the leftovers reheated well in the microwave. The only thing I did different was only adding a dash of the garlic powder (as it was for a kids party) and I thought they were perfect. There was lots of batter left after filling 24 mini muffin cups, I got 28-30 out of each batch! I will be making these again, they will also make a neat lunch addition to send with our 6 year old to school. (He called them pizza muffins.)
