1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon ground red pepper (cayenne)
1 Half Stick (1/4 cup) Land O Lakes® Butter with Olive Oil & Sea Salt
1 (2- to 2 1/2-pound) boneless pork loin
1/2 cup finely chopped strawberries
1/2 cup finely chopped mango
1/2 cup finely chopped pineapple
1/4 cup finely chopped red onion
1 tablespoon fresh lime juice
Heat oven to 350ºF.
Line 13x9-inch glass baking dish or roasting pan with aluminum foil; set aside.
Combine all spice rub ingredients in bowl; rub onto pork roast.
Melt butter in 12-inch skillet until sizzling. Add pork; cook until browned on all sides. Place into prepared pan; pour butter from pan over pork.
Bake 60-70 minutes or until internal temperature reaches 145ºF. Let rest 15 minutes before serving.
Combine all salsa ingredients in bowl. Serve with roasted pork.
