12 (5x2 1/2-inch) double chocolate graham crackers
3/4 cup milk chocolate chips
3/4 cup salted peanuts
3/4 cup firmly packed brown sugar
3/4 cup Land O Lakes® Butter
1 teaspoon vanilla
2 cups miniature marshmallows
*Substitute regular flavor graham crackers.
Heat oven to 350°F.
Line 15x10x1-inch baking pan with aluminum foil. Place graham crackers onto pan in single layer; sprinkle evenly with chocolate chips and peanuts.
Combine brown sugar, butter and vanilla in 2-quart saucepan. Cook over medium heat, stirring occasionally, 3-5 minutes or until mixture comes to a full boil. Boil, stirring constantly, 3 minutes or until candy thermometer reaches 240°F.
Pour butter mixture immediately over chocolate chips and peanuts. Bake 6-8 minutes or until bars are bubbly around edges. Sprinkle with marshmallows; continue baking 3-4 minutes or until marshmallows are softened. Cool completely. Cut into bars.

We made these as a dish-to-pass for a weinie roast this weekend and they were a hit! We made half with regular graham crackers and half with the chocolate grahams. We chose to leave out the peanuts and cut them in small bars (as pictured). While very sweet the small serving helped keep them from being overwhelming and made a perfect finger food.
P.S. I forgot to mention: Line the cookie sheet with foil, then spray/grease. The cookies will come out alot easier. Also, no mess.
