1 cup Land O Lakes® Butter, softened
1 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour
1 cup finely chopped pecans
1/2 cup finely crushed potato chips
Sugar or coarse grain sugar
Heat oven to 350°F.
Combine butter, sugar and vanilla in large bowl; beat at medium speed until creamy. Reduce speed to low; add flour, pecans and potato chips; beat until well mixed.
Shape dough into 1-inch balls; place onto ungreased cookie sheets. Flatten each to 1/4-inch thickness with bottom of glass dipped in sugar.
Bake for 10-12 minutes or until cookies are just set. Cool 1 minute on cookie sheets; remove to wire cooling rack. Cool completely.
Use decorator sanding sugar instead of white sugar to vary the appearance.
