Ingredients

large Land O Lakes® Eggs
1/3 cup
milk
2 tablespoons
Land O Lakes® Butter
3/4 cup
cooked crumbled breakfast sausage
1/2 cup
black beans, rinsed, drained
2 tablespoons
chopped green chiles
3/4 cup
shredded hot pepper jack cheese
Chopped fresh cilantro, if desired
Refrigerated fresh salsa, if desired

Directions

  1. Combine eggs and milk in bowl; beat with whisk until well mixed.
  2. Melt butter in 8-inch nonstick skillet until sizzling; add egg mixture. Cook over medium heat, gently lifting and stirring slightly with spatula to allow uncooked portion to flow underneath, 1-2 minutes or until almost set. Sprinkle sausage, beans and green chiles over eggs. Cover; continue cooking 7-9 minutes or until set.
  3. Sprinkle with cheese. Cover; remove from heat. Let stand 1 minute or until cheese is melted. Sprinkle with chopped cilantro, if desired.
  4. Cut into 6 wedges. Serve each with salsa, if desired.
