Slow Cooker Rustic Beef Stew

Ingredients

2 pounds
beef stew meat, cut into bite-sized pieces
1/3 cup
all-purpose flour
 
1 teaspoon
salt
6 tablespoons
Land O Lakes® Butter
1 small (1/2 cup)
onion, chopped
3 (2 cups)
parsnips, peeled, sliced in half lenghtwise, sliced 1/2-inch thick
2 medium (1 pound)
sweet potatoes, peeled, cut into 3/4-inch pieces
1 (28-ounce) can
diced tomatoes with juice
1 (14.5-ounce) can
beef broth
1 tablespoon
chopped fresh parsley
1 teaspoon
garlic powder
1/4 teaspoon
pepper

Directions

  1. Place beef stew meat, flour and salt into large resealable plastic food bag. Seal bag tightly; shake bag until meat is coated in flour; set aside.
  2. Melt 2 tablespoons butter in 12-inch skillet over medium heat until sizzling. Add onion; cook 2-3 minutes or until onions soften.
  3. Add beef to skillet; discard extra flour. Cook, stirring occasionally, 5-7 minutes or until meat is browned.
  4. Add beef and juices from skillet to slow cooker. Cut remaining 4 tablespoons butter into small pieces; add to slow cooker. Add all remaining ingredients to slow cooker. Stir to combine.
  5. Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-6 hours or until vegetables and meat are tender.
