2 cups all-purpose flour
3/4 cup sugar
1/2 cup Land O Lakes® Light Butter with Canola Oil
2 large Land O Lakes® Eggs
1 tablespoon freshly grated orange zest
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 cup orange juice
2 large (1 cup) ripe bananas, mashed
1 cup sweetened flaked coconut
STEP 1
Heat oven to 350°F. Grease 9x5-inch loaf pan.
STEP 2
Combine all ingredients except orange juice, bananas and coconut in bowl. Beat at low speed, scraping bowl often, until well mixed.
STEP 3
Add orange juice and bananas. Continue beating, scraping bowl often, until well mixed. Stir in coconut.
STEP 4
Spread batter into greased 9x5-inch loaf pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove from pan to cooling rack. Cool completely.
