Ingredients

1 cup
powdered sugar
1/2 cup
Land O Lakes® Butter, softened
2
large Land O Lakes® Eggs (yolks only)
1 tablespoon
vanilla
1 1/4 cups
all-purpose flour
1/8 teaspoon
salt
Decorator sugar, if desired

Directions

  1. Combine powdered sugar, butter, egg yolks and vanilla in bowl. Beat at medium speed until well mixed. Add flour and salt; beat at low speed until well mixed. Wrap dough in plastic food wrap. Refrigerate 1 hour or overnight until firm.
  2. Heat oven to 350°F.
  3. Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Flatten with bottom of glass dipped in sugar. Sprinkle with decorator sugar, if desired. Bake 9-11 minutes or until edges are browned.

I love this cookie! I use "self-rising flour", so I do not use baking soda or salt. I have used self-rising flour for the past 40 yrs and will never use reg flour.

Very light and crispy, great texture. Hate soft cookies, so these were great. Had trouble getting them off the bottom of the glass, but smooshed them with my hand and they turned out great!
