Combining green and yellow sugar gives the outside of this easy cookie the appearance of watermelon rind.

3/4 cup Land O Lakes® Butter softened
3/4 cup sugar
1 large Land O Lakes® Egg
1/2 teaspoon vanilla
8 to 9 drops red food color
2 cups all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 cup miniature semi-sweet chocolate chips
1/4 cup green decorator sugar
1 tablespoon yellow or gold decorator sugar
Combine butter and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, vanilla and red food color; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in chocolate chips.
Divide dough in half; shape each half into 4 1/2-inch log.
Combine green and yellow decorator sugars in pie pan. Roll each log in sugar mixture until outside is well coated. Wrap each log in plastic food wrap; refrigerate 1-2 hours or until firm.
Heat oven to 375°F.
Cut logs in half lengthwise; cut each half into 1/4-inch slices with sharp, serrated knife. Place 1 inch apart onto ungreased cookie sheets. Bake 7-9 minutes or until set. Cool completely.

These cookies took a while to get the hang of, but once we did, my mom and I couldn't stop making them. They're adorable and yummy! Very worth the effort.
Very crumbly, and didn't look much like watermelons even after adding food coloring. Not necessarily a bad recipe, but not one I'll make again when there are so many better cookies to make.
