Mango Butter*
1/2 cup Land O Lakes® Butter with Canola Oil
2 tablespoons hot mango chutney
Southwest Waffles
1 large Land O Lakes® Egg
1 1/4 cups all-purpose flour
1 cup milk
1/4 cup Land O Lakes® Butter, melted
2 tablespoons sugar
2 teaspoons baking powder
1 cup shredded sharp Cheddar cheese
1/4 cup chopped fresh cilantro leaves
1 tablespoon seeded finely chopped jalapeño pepper
1 teaspoon chili powder
1/4 teaspoon salt
STEP 1
Combine Butter with Canola Oil and mango chutney in bowl; mix well. Set aside.
STEP 2
Heat waffle iron.
STEP 3
Beat egg in bowl until light yellow color (about 45 seconds). Stir in flour, milk, melted butter, sugar and baking powder until well mixed.
STEP 4
Stir in cheese, cilantro, jalapeño, chili powder and salt until just combined
STEP 5
Cook batter in waffle maker according to manufacturer's directions.
STEP 6
Serve immediately with mango butter.
