1 large Land O Lakes® Egg, separated
1/3 cup sugar
1 Half Stick (1/4 cup) Land O Lakes® Butter, softened
2 teaspoons freshly grated lemon zest
1 tablespoon lemon juice
1/4 cup all-purpose flour
1/2 teaspoon baking powder
4 tablespoons lemon curd
Powdered sugar, as desired
Fresh fruit, as desired
Butter 2 (8- to 12-ounce) coffee mugs. Set aside.
Beat egg white and pinch of salt in medium bowl until stiff peaks form. Set aside.
Combine egg yolk, sugar, butter, lemon zest and lemon juice in small bowl; beat at medium speed until creamy. Add flour and baking powder; beat until combined. Gently fold beaten egg white into batter with spatula.
Divide evenly between prepared mugs. Top each with 2 tablespoons lemon curd. Microwave 2 minutes or until cake starts to pull away from sides of mug.
Let mugs cool slightly, about 2-3 minutes, before eating. The lemon curd gets very hot while cooking.
Sprinkle with powdered sugar and top with fresh fruit, as desired.
