1 (15.25- to 16.5-ounce) package white cake mix
1 1/4 cups water
1/3 cup Land O Lakes® Butter melted
3 large Land O Lakes® Eggs
3 cups coarsely crumbled chocolate chip cookies
6 ounces bittersweet chocolate, melted, cooled
3/4 cup Land O Lakes® Butter softened
1 tablespoon vanilla extract
3 1/2 cups powdered sugar
1/3 cup Land O Lakes® Heavy Whipping Cream
1/8 teaspoon salt
Whole or crumbled chocolate chip cookies, if desired
Heat oven to 350°F. Grease and flour 2 (8-inch) round cake pans. Set aside.
Combine cake mix, water, 1/3 cup melted butter, and eggs in bowl; beat at medium speed until well mixed. Stir in 3 cups cookie crumbles.
Divide batter evenly between prepared pans. Bake 27-31 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely.
While cake is cooling, combine melted chocolate, 3/4 cup butter and 1 tablespoon vanilla in bowl; beat at medium speed until creamy. Add powdered sugar, salt, and enough whipping cream for desired spreading consistency, beating at low speed until well mixed. Beat on high 1 minute or until light and fluffy.
Place 1 cake layer onto serving plate, bottom-side up. Frost top of cake with 1 cup frosting. Place remaining cake layer over frosting, bottom-side down. Frost top and sides of cake. Decorate with remaining cookies as desired.
