Zested Orange Cake

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3 large Land O Lakes® Eggs, separated

1 cup sugar

1/2 cup Land O Lakes® Butter, softened

1 tablespoon freshly grated orange zest

2 teaspoons vanilla extract

1/2 cup orange juice

1/4 cup whole milk

 

Powdered sugar for dusting

How to make

  1. STEP 1

    Heat oven to 350°F. Line bottom of 9- or 10-inch springform pan with parchment paper; set aside.

  2. STEP 2

    Combine flour, baking powder and salt in medium bowl. Set aside.

  3. STEP 3

    Beat egg whites in stand mixer with whisk attachment until stiff peaks form. Set aside.

  4. STEP 4

    Combine sugar and butter in large bowl; beat at medium speed until light and fluffy. Add reserved egg yolks, 1 at a time, until well combined, scraping bowl often. Mix in orange zest and vanilla.

  5. STEP 5

    Combine orange juice and milk in small bowl. Add 1/3 of flour mixture to butter mixture. Beat at low speed until combined. Add 1/2 of milk mixture; beat until combined, scraping bowl often. Repeat alternating dry and wet ingredients until well combined. Gently fold in whipped egg whites, being careful not to deflate egg whites.

  6. STEP 6

    Pour batter into prepared pan. Bake 28-32 minutes or until toothpick inserted into center of cake comes out clean. Cool completely before removing from pan. Dust top generously with powdered sugar.

Tip #1

Make this cake even more of a treat by serving slices with freshly whipped cream.

Tip #2

You can buy candied orange slices at specialty food stores, though they are also easy to make at home: Place 1 1/2 cups water and 1/2 cup sugar into 1-quart saucepan. Cook over medium heat until mixture comes to a boil and sugar is dissolved. Slice an orange into thin (about 1/8-inch) slices. Cook slices in sugar syrup, turning occasionally, 30 minutes or until liquid has reduced to thick syrup. Remove from syrup; place onto cooling rack. Cool completely. Store refrigerated.

Tip #3

Candied orange slices are an elegant garnish for this cake. You can buy them at specialty food stores, though they are also easy to make at home: Place 1 1/2 cups water and 1/2 cup sugar into 1-quart saucepan. Cook over medium heat until mixture comes to a boil and sugar is dissolved. Slice an orange into thin (about 1/8-inch) slices. Cook slices in sugar syrup, turning occasionally, 30 minutes or until liquid has reduced to thick syrup. Remove from syrup; place onto cooling rack. Cool completely. Store refrigerated.

Tip #4

Make homemade candied orange slices using the recipe found in the Tip for Tangerine Supreme Tart (using orange instead of tangerine slices) or buy them ready-made at specialty food stores.
