1 cup all-purpose flour
1/2 cup buckwheat or whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Land O Lakes® Butter, melted
2/3 cup firmly packed brown sugar
1/3 cup sugar
2 large Land O Lakes® Eggs
2 teaspoons vanilla extract
6 ounces dark (60-75%) chocolate chunks or coarsely chopped bar, 1/3 cup reserved
STEP 1
Combine flour, buckwheat flour, baking powder, baking soda and salt in small bowl. Set aside.
STEP 2
Whisk together melted butter, brown sugar and sugar in large bowl until creamy. Add eggs, 1 at a time, mixing after each until well combined. Whisk in vanilla. Add flour mixture; stir just until combined. (Do not overmix.) Gently fold in chocolate. Cover; refrigerate at least 2 hours.
STEP 3
Heat oven to 375°F.
STEP 4
Scoop 2 tablespoons dough, 3 inches apart, onto parchment-lined cookie sheet (6 cookies per sheet). Press a few pieces reserved chocolate onto each cookie. Bake 8-10 minutes or until lightly browned. Remove from cookie sheet to cool.
