Berry Jam Layer*
6 ounces blackberries
6 ounces blueberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon freshly grated lemon zest
Crust
1 cup Land O Lakes® Butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
Lemon Layer
1 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
4 large Land O Lakes® Eggs
1/4 cup fresh lemon juice
Powdered sugar
*Substitute 1 1/4 cups seedless blackberry jam.
STEP 1
Combine all berry jam ingredients in small saucepan over medium heat. Cook, stirring frequently, until berries start to break down and mixture boils. Continue cooking 10 minutes or until mixture is jam consistency. Remove from heat; strain to remove seeds. Set aside. (If using purchased jam, skip this step.)
STEP 2
Heat oven to 350°F. Line 13x9-inch baking pan with foil; lightly spray with nonstick cooking spray. Set aside.
STEP 3
Combine butter and 1/2 cup sugar in large bowl; mix until well combined and creamy. Slowly add 2 cups flour; mix until just combined. Press into prepared pan. Bake 13-15 minutes or until edges are light golden brown.
STEP 4
Meanwhile combine 1 cup sugar, 3 tablespoons flour, baking powder and salt in medium bowl. Whisk to combine. Add 1 tablespoon lemon zest and eggs. Whisk to combine. Stir in lemon juice.
STEP 5
Pour berry jam onto warm crust; evenly spread over crust. Slowly and carefully pour lemon mixture over berry jam, covering jam completely. Bake 18-23 minutes or until golden brown and middle is set.
STEP 6
Let cool completely before cutting and serving. Store in refrigerator.
STEP 7
Sprinkle bars with powdered sugar before serving.
