Ingredients

1 cup peanut butter

1 Half Stick (1/4 cup) Land O Lakes® Butter

1 teaspoon vanilla extract

2 cups powdered sugar

1/4 teaspoon salt

1/2 cup butterscotch-flavored baking chips

1 cup semi-sweet chocolate chips

How to make

  1. STEP 1

    Combine peanut butter, butter and vanilla in large bowl. Mix until smooth. Add powdered sugar and salt. Slowly mix until combined. Roll dough into tablespoon-size balls. Place onto parchment- or waxed paper-lined pan; cover lightly with plastic wrap. Refrigerate at least 1 hour.

  2. STEP 2

    Place butterscotch chips into medium microwave-safe bowl. Microwave in 30-second intervals, stirring occasionally, until melted and smooth. Stir in chocolate chips; microwave in 15-second intervals until melted and smooth. Let cool slightly.

  3. STEP 3

    Working with a few peanut butter balls at a time (keep remaining in refrigerator), use toothpick or skewer to dip each ball in melted chocolate mixture, shaking off excess, leaving peanut butter top exposed. (If dipping mixture gets too thick, reheat 5-10 seconds in microwave.) Set dipped buckeyes on parchment- or waxed paper-lined pan; refrigerate 20 minutes or until set. Cover and store refrigerated.
