Cashew Corn Crunch Clusters

1/2 cup Land O Lakes® Butter

2/3 cup firmly packed brown sugar

1 tablespoon light corn syrup

1/4 teaspoon vanilla

3 cups crisp corn cereal squares

1 cup lightly salted cashews

How to make

  1. STEP 1

    Line 2 baking sheets with waxed paper. Set aside.

  2. STEP 2

    Melt butter in 3-quart saucepan 2-3 minutes over low heat, stirring constantly. Stir in brown sugar and corn syrup. Increase heat to medium. Cook, stirring constantly, 1-2 minutes or until mixture comes to a full boil. Boil 1 minute. Remove from heat. Stir in vanilla. Add cereal and cashews; gently stir until well coated.

  3. STEP 3

    Drop mixture by rounded tablespoonfuls onto prepared baking sheets. Cool completely.

Tip #1

Variation: Cashew Corn Crunch Bars: Double all ingredients. Spray 13x9-inch pan with no-stick cooking spray. Spread cereal mixture into prepared pan. Cool completely. Cut into bars.
