Crunchy Hummus Stuffed Pitas

1 (10-ounce) container hummus

3 pita bread rounds, cut in half

2 medium tomatoes, seeded, cut into 12 slices

1 small cucumber, cut into 18 slices

3 ounces (3/4 cup) feta cheese, crumbled

1/3 cup alfalfa sprouts, if desired

1/3 cups shredded carrots, if desired

How to make

  1. STEP 1

    Spread 3 tablespoons hummus into each pita half. Place 2 slices tomato, 3 slicescucumber and2 tablespoons feta cheese into each sandwich. Add alfalfa sprouts and shredded carrots, if desired.

  2. STEP 2

    Wrap each sandwich individually in waxed paper or plastic food wrap; refrigerate until serving time.

Tip #1

Hummus, available in the deli department of your grocery store, is a great source of fiber and protein.
