Chocolate Coffee Liqueur Cookies

1 2/3 cups sugar

2/3 cup Land O Lakes® Butter, softened

1/3 cup brewed coffee, cooled

1/4 cup coffee-flavored liqueur  

2 large Land O Lakes® Eggs

2 (1-ounce) squares unsweetened baking chocolate, melted

2 teaspoons vanilla

2 3/4 cups all-purpose flour

2 teaspoons baking powder

3/4 teaspoon salt

1/4 teaspoon ground cinnamon


3 tablespoons Land O Lakes® Butter, softened

3 cups powdered sugar

2 tablespoons coffee-flavored liqueur  

3 to 4 tablespoons brewed coffee, cooled

 *Substitute 1/4 cup brewed coffee, cooled. **Substitute 2 tablespoons brewed coffee, cooled.

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine sugar, 2/3 cup butter, 1/3 cup coffee, 1/4 cup liqueur, eggs, melted chocolate, and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add all remaining cookie ingredients; beat at low speed until well mixed.

  3. STEP 3

    Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 8-12 minutes or until set. Let stand 1 minute on cookie sheets; remove to cooling rack. Cool completely.

  4. STEP 4

    Combine all frosting ingredients except 3 to 4 tablespoons coffee in bowl. Beat at low speed, scraping bowl often and gradually adding enough coffee for desired spreading consistency. Frost cooled cookies. Drizzle with melted chocolate chips, if desired.

Tip #1

To melt chocolate, place chocolate in small microwave-safe bowl. Microwave on HIGH for 1 minute; stir. If unmelted chocolate remains, microwave on HIGH an additional 30 seconds. Cool slightly.
