Peanut Butter Hedgehogs

1 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 cup Land O Lakes® Butter, softened

1/2 cup creamy peanut butter

2/3 cup firmly packed brown sugar

1/3 cup sugar

1 large Land O Lakes® Egg

1 teaspoon vanilla


1 cup mini semi-sweet chocolate chips

1 large Land O Lakes® Egg, beaten

How to make

  1. STEP 1

    Heat oven to 350°F. Grease cookie sheet; set aside.

  2. STEP 2

    Combine flour, baking powder and salt in bowl. Set aside.

  3. STEP 3

    Place butter into bowl. Beat at medium speed, scraping bowl often, until creamy. Add peanut butter, brown sugar and sugar; continue beating until well mixed. Add 1 egg and vanilla; continue beating until well mixed. Add flour mixture; beat at low speed until well mixed.

  4. STEP 4

    Place chocolate chips in another small bowl.

  5. STEP 5

    Shape dough into 1-inch balls. Picking up 1 ball between thumb and index finger, gently shape nose of hedgehog. Dip back of hedgehog into beaten egg; then into chocolate chips. Place 2 inches apart onto prepared cookie sheet.

  6. STEP 6

    Place 2 chips on each cookie to form eyes. Repeat with remaining dough. Bake for 10-12 minutes or until cookies are just set.
