Peppercorn Bison Burger

1 pound ground bison

1/4 cup spicy mustard

1 teaspoon Cajun seasoning

8 teaspoons cracked black pepper

8 (3/4-ounce) slices Land O Lakes® Sharp Cheddar American Blend

4 hamburger buns, split

Leaf lettuce, if desired

Tomato slices, if desired

How to make

  1. STEP 1

    Heat gas grill to medium or charcoal grill until coals are ash white.

  2. STEP 2

    Shape ground bison into 4 patties. Flatten each to 4 inches.

  3. STEP 3

    Combine mustard and Cajun seasoning in bowl; mix well. Reserve 2 tablespoons for buns. Spread 1 side of each burger patty with remaining mustard mixture.

  4. STEP 4

    Sprinkle mustard-side of each burger patty with 2 teaspoons cracked pepper, pressing pepper into mustard slightly.

  5. STEP 5

    Place burgers onto grill, pepper-side up. Grill, turning once, 12-14 minutes or until internal temperature reaches at least 160°F and meat is no longer pink in center. Place 2 slices cheese onto each burger; continue grilling 1-2 minutes or until cheese begins to melt.

  6. STEP 6

    Spread bottom half of buns with mustard mixture; top each with lettuce, tomato, burger and top half of bun. Serve immediately.
