1 cup Land O Lakes® Butter, softened

1 cup sugar

1 large Land O Lakes® Egg

1 teaspoon vanilla

2 1/2 cup all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1/4 cup finely chopped maraschino cherries, well-drained

2 to 3 drops red food color

1/4 cup finely chopped pistachio nuts

2 to 3 drops green food color

Ice cream, if desired

How to make

  1. STEP 1

    Combine butter, sugar, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed.

  2. STEP 2

    Divide dough into thirds. Add chopped cherries and desired amount red food color to one-third; mix well by hand. Add pistachios and desired amount green food color to second third of dough; mix well by hand.

  3. STEP 3

    Shape each third of dough between two sheets of lightly floured waxed paper into 7x6-inch rectangle. Layer pink, white and green dough on large sheet of plastic food wrap; press down gently. Wrap securely in plastic food wrap. Refrigerate until firm (2 hours or overnight).

  4. STEP 4

    Heat oven to 350°F.

    Cut rectangle lengthwise into three pieces with sharp knife. Cut each piece crosswise into 1/4-inch slices. Place slices 1 inch apart onto ungreased cookie sheets. Bake for 9 to 11 minutes or until edges just begin to brown. Cool completely.

  6. STEP 6

    Serve cookies with ice cream, chopped pistachios and maraschino cherries, if desired.

Tip #1

Wear plastic gloves when kneading food color into dough to prevent your hands from becoming discolored.
