Twice-Baked Sweet Potatoes

4 (about 2 pounds) sweet potatoes

1/3 cup Land O Lakes® Cinnamon Sugar Butter Spread, melted

2 tablespoons orange juice

2 teaspoons country-style Dijon mustard

1 teaspoon salt

1/4 teaspoon pepper


How to make

  1. STEP 1

    Heat oven to 400°F.

  2. STEP 2

    Prick sweet potatoes with fork. Bake 50-55 minutes or until soft. Cool slightly on cooling rack.

  3. STEP 3

    Cut lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact. Scoop out flesh, leaving 1/2-inch border on skins.

  4. STEP 4

    Place flesh into bowl; add all remaining ingredients. Beat at medium speed until smooth.

  5. STEP 5

    Spoon mashed potato mixture evenly into skins. Bake 15-20 minutes or until heated through.

  6. STEP 6

    Top with additional Cinnamon Sugar Butter Spread, as desired.
