QI am looking for recipes to serve at a morning coffee hour for about 20 ladies.

A little treat is all that’s needed to entice attendance for your morning coffee group. These three goodies are each prepared in 20 minutes, and you can brew the coffee and arrange your table while they bake.

A slice of Tropical Banana Bread with coconut and banana will enliven any conversation. Simple Sour Cream Scone Bites with currants and citrus will keep things lively. Or try a classic Orange Apricot Crumb Cake – sure to conjure up warm memories. You may soon find everyone looks forward to coming for coffee!

From the Test Kitchens... Peggy - we did not test this recipe using dried apricots. It is important that you have enough liquid in the cake and you would also need liquid to re-hydrate the dried apricots too. Not knowing the total amount of liquid you would need it is difficult to make a recommendation. You could substitute canned peaches as a suggestion if you did not want to use canned apricots.

I would like to make the orange apricot crumb cake. I have a bag of dried apricots that I would love to put to good use...any chance that I can subsitute the can apricots for the dried apricots in your receipe. If so, at what measurement and would I need to allow the apricots to soak in water for an extended period of time in order to have the juice the receipes call for...any additional suger? Thanks.
