QMy son will be a sophomore in college this fall, living in his first studio apartment with a roommate. Can you suggest some easy-to-prepare, simple recipes for this first-time cook?

How wonderful of you to think ahead to help your son transition to cooking in college. Along with the long study hours, he'll get a smaller kitchen and start managing his food choices. For many of us, college became an endless menu of boxed mac and cheese, pizza, and canned soup.

What a gift to share some recipes to get him started.  If he's a pasta fan, he can't go wrong with Spaghetti Skillet Dinner. The Hurry-up Ham and Cheese Skillet is perfect for a quick dinner. Finally, the Skillet Chicken and Potato Dinner is a hearty meal he can even share with his roommate. These three meals are incredibly easy and quick, and they can all be made in a single skillet to help with that other college challenge - clean up! You'll feel better knowing he has some healthy choices to mix in.
