QIn my part of the country, it's hard to stay cool in August even with the air conditioner running full blast. I would love some recipe ideas for cold meals that are satisfying and can be accomplished with minimal cooking time.

Your question really hits on something that we all grapple with on hot, hot days. Nothing makes a better dinner this time of the year than a chilled, refreshing entrée salad with a flavorful dressing! Another great summer treat is to grill extra chicken, shrimp or steak whenever you're grilling; then simply refrigerate for use in the next day or two. When making a salad, add the grilled meat to a pasta or green salad for a delicious, smoky flavor (and less time in the kitchen!)
