I have joked (only half-jokingly) to our Test Kitchen team that I would like to write a love letter to eggs. I mean, seriously, is there anything the humble egg can’t do?!? I will restrain myself from going full-on fan girl in this installment, and focus instead on eggs for every meal.
Eggs are best known for being a breakfast staple, and rightfully so. They are delicious scrambled, poached or fried – not to mention in omelets, pancakes and waffles. However, anyone who knows me knows that I am not satisfied with the status quo. I like to reinvent, remix and re-imagine things, especially when it comes to food. What’s for lunch today? In my world, this question is most frequently answered in one of two ways: salad or sandwich. Egg salad, whether stuffed into a pita or broiled on an English muffin, makes for a satisfying lunch. And a Lemon Pepper Cobb or Bacon Ranch Macaroni salad just wouldn’t have the same appeal without eggs.
