Grilled Pita, Please!

If you're like me and love a good Margherita pizza, this simple Grilled Tomatoes & Basil Pita Bread has your name written all over it! It's quick, requires very few ingredients and because you crisp it on the grill, it's the perfect appetizer for when you plan to cook out. In fact, I enjoyed these so much that I made them one night with my husband, then the very next night used the extra supplies to prepare them for my family at my parents' house!

Start by heating your grill up. Gas grills should be set to medium, and charcoal grills are ready when the coals are ash white. Then, collect your ingredients. The recipe gives you the option of using pita bread or tortillas (although, I'd be willing to bet that flatbread might work too). We always have flour tortillas on hand, so I used those. Chop up the onions, basil and tomatoes and shred your LAND O LAKES® Mozzarella Cheese.

Now, these photos are from my first round of grilled pitas (or in my case, tortillas). Even though the recipe said to layer the ingredients and then put them on the grill, I thought I could save a step and do it all outside. This worked reasonably well when I was just making two pitas, but when I made a handful of them at my parents' house, I learned from experience and assembled the pitas on a cookie sheet first. Those pitas looked even nicer and I didn't have to keep such a close eye on them to make sure they didn't burn. So, take it or leave it - there are two approaches to pita assembly: the leisurely and the race.

Start by spreading a little olive oil on your "crust".

Next sprinkle your chopped onion and fresh basil. And please, I beg of you, use the fresh basil! It can be done with the dried stuff, but the flavor of fresh basil is so delightful that you'll be missing out. I told my family I'm growing it on my patio next summer so I can eat pitas all summer long without having to dash to the grocery store.

Layer your tomatoes next. You can chop them into little pieces or try  to make thin slices. It's up to you!

Last, is the finishing touch - the LAND O LAKES® Mozzarella Cheese. I think we may have gone a little overboard on how much we added, but it made for yummy, cheesy pitas!

Now close the grill so the cheese can melt and the edges of your pita can crisp.

Finally, remove your Grilled Tomatoes & Basil Pita Bread from the grill and slice it into smaller pieces. The great thing is, you can serve it as a little appetizer or as a thin crust "pizza" for kids and grown ups alike! Honestly, at the risk of sounding given to extremes (which, typically, I am not), the second that I tasted this, I told my husband, "I am serving this as my appetizer every time we grill with friends from now on!"
