Buffalo Mac 'n Cheese

With a (relatively) new baby around the house, I have rediscovered my love of slow cookers. I have to admit, before my son was born, the slow cooker was collecting dust in the basement. Now that I have a baby waiting for me, dinner is one of the last things on my mind. And this is where the magic of the slow cooker comes in – I don’t have to worry about making dinner because it’s ready for me when I get home!

With a (relatively) new baby around the house, I have rediscovered my love of slow cookers. I have to admit, before my son was born, the slow cooker was collecting dust in the basement. Now that I have a baby waiting for me, dinner is one of the last things on my mind. And this is where the magic of the slow cooker comes in – I don’t have to worry about making dinner because it’s ready for me when I get home!

My husband enjoys foods that have some kick – especially chicken wings. And I enjoy anything with noodles and cheese. So I decided to try Buffalo Mac 'n Cheese. It marries the two things we love most, so why not? It only cooks for about 1 1/2 hours, so I made it the night before and put it in the fridge. At about 4 p.m., I had my husband take it out of the fridge and put it in the slow cooker. I’m lucky to have a husband who works from home! It took about 2 hours to cook through completely since it came out of the fridge cold.

How did it turn out? It’s cheesy, warm comfort in a bowl. The bold flavor of the hot sauce, cooled by the tang of the blue cheese crumbles tasted just like buffalo wings without the mess. Pair this dish with some crusty bread and a crisp green salad, and dinner is complete.
