Broccoli Cheesy Soup

1/4 cup Land O Lakes® Butter

1 medium (1 cup) onion, chopped

1 teaspoon finely chopped fresh garlic

1 teaspoon salt

1/8 teaspoon ground red pepper (cayenne)

3 tablespoons all-purpose flour

2 cups chicken or vegetable broth

1 medium (1 cup) Yukon gold potato, peeled, diced 1/4 inch

4 cups bite-sized fresh or frozen broccoli florets

2 cups Land O Lakes® Half & Half

8 ounces (2 cups) Land O Lakes® Sharp Yellow Cheddar Cheese, shredded, plus more for serving

Salt and pepper, as desired

How to make

  1. STEP 1

    Melt butter in stockpot over medium heat. Add onion; cook 5 minutes or until it begins to soften. Add garlic, 1 teaspoon salt and cayenne.

  2. STEP 2

    Sprinkle flour over onion mixture; cook, stirring, 2 minutes. Slowly whisk in broth. Add potato; bring to a slow boil. Cover. Cook 8-10 minutes or until potato is tender.

  3. STEP 3

    Using immersion blender or traditional blender, puree mixture until potatoes are smooth. Add broccoli and half & half. Cook, covered, over medium-low heat, 20 minutes or until broccoli is tender. Stir in 8 ounces cheese; cover. Cook 1 minute. Uncover; stir until fully melted. Season with additional salt and pepper, as desired. Serve with additional shredded cheese.
