White Cheddar Bisque
This rich, decadent, velvety bisque features Land O Lakes® Extra Sharp White Cheddar Cheese, thick-cut bacon and minced fresh chives.

Ingredients
4 slices bacon, diced 1/4 inch
1 cup Land O Lakes® Butter
34 cup diced onion
12 cup diced celery
12 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon kosher salt
14 teaspoon pepper
1 quart chicken broth
2 (8-ounce) packages (4 cups) Land O Lakes® Extra Sharp White Cheddar Cheese Chunk, shredded, divided
1 cup Land O Lakes® Heavy Whipping Cream
Minced fresh chives, as desired for garnish
How to make

STEP 1
Cook bacon in large stockpot over low heat 10 minutes or until crispy. Remove bacon with slotted spoon to paper-towel lined plate; reserve for garnish. Remove all but 1 tablespoon bacon fat from pot.

Melt butter in same pot; add onion and celery; cook, stirring occasionally, 5 minutes or until tender. Add flour, garlic powder, salt and pepper; cook, stirring constantly, 1 minute. Stir in wine. Use wooden spoon to deglaze pot, scraping up any browned bits. Add broth; bring to a boil.

Remove pot from heat once mixture has thickened slightly. Add 3 cups cheese. Cook, stirring constantly, until fully incorporated and melted. Add whipping cream; stir to combine. Using immersion blender, puree soup until smooth. (If using stand blender, work in batches to process mixture, taking care not to fill blender more than half full to avoid overflow.) Taste and season with additional salt and pepper, as desired. Ladle into bowls; top with reserved crumbled bacon, chopped chives and remaining 1 cup cheese.
