Sirloin Steaks with Gochujang Pan Sauce

Ingredients
Steaks
1 (1/4-ounce) envelope unflavored gelatin
1 cup beef broth
4 (4- to 6-ounce ) boneless sirloin steaks
1 tablespoon canola oil
1 teaspoon kosher salt
12 teaspoon pepper
Gochujang Sauce
2 tablespoons rice wine vinegar
1 tablespoon gochujang sauce
1 tablespoon honey
2 teaspoons finely chopped fresh garlic
1 Half Stick (1/4 cup) Land O Lakes® Butter, cut into 8 pieces
12 teaspoon sesame oil
How to make

STEP 1
Sprinkle gelatin over broth in small bowl; set aside.

Rub steaks with canola oil, salt and pepper. Heat 12-inch nonstick skillet over high heat. Place steaks into skillet; cook 2-3 minutes or until browned. Turn over; continue cooking 2-3 minutes or until internal temperature reaches at least 145°F. Remove steaks to plate; cover tightly with foil.

Add rice wine vinegar to skillet; scrape up browned bits from bottom of pan. Add broth mixture, gochujang sauce, honey and garlic to skillet; cook over medium-low heat 3-5 minutes or until reduced by half. Reduce heat to low. Add butter, 2 pieces at a time, whisking constantly until fully incorporated. Remove pan from heat; stir in sesame oil.

STEP 4
Slice steaks; serve with sauce.
Tip #1
Adding gelatin to the stock adds body, and is an easy shortcut when homemade stock isn’t available.
Tip #2
Any leftover sauce can be served with sides such as veggies or roasted potatoes.
Tip #3
This sauce works especially well with lean cuts, but use another favorite cut of meat if you'd rather.
