Becky's Butter Cake

Ingredients

Cake

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 cups sugar

1 cup Land O Lakes® Butter softened

4 large Land O Lakes® Eggs

2 teaspoons vanilla

1 cup milk

Frosting

1/2 cup Land O Lakes® Butter softened

3 (1-ounce) squares unsweetened baking chocolate, melted, cooled

4 cups powdered sugar

1/4 cup milk

2 teaspoons vanilla

Decorator sprinkles, if desired

How to make

  1. STEP 1

    Heat oven to 350°F. Grease 13x9-inch baking pan; set aside.

  2. STEP 2

    Combine flour, baking powder and salt in bowl. Set aside.

  3. STEP 3

    Place sugar and 1 cup butter in another bowl; beat at medium speed, scraping bowl occasionally, until creamy. Add eggs, 2 at a time, beating well after each addition. Add 2 teaspoons vanilla. Add flour mixture alternately with 1 cup milk, beating at low speed after each addition.

  4. STEP 4

    Pour batter into prepared pan. Bake 45-55 minutes or until toothpick inserted in center comes out clean. Cool completely.

  5. STEP 5

    Place 1/2 cup butter and cooled chocolate in bowl; beat at medium speed until creamy. Gradually add powdered sugar, alternately with 1/4 cup milk and 2 teaspoons vanilla and scraping bowl occasionally, until well mixed. Frost cooled cake. Sprinkle with decorator sprinkles, if desired.

Tip #1

- Add 1 to 2 tablespoons additional milk to frosting for desired spreading consistency.

Tip #2

- This cake is very versatile. Frost the cake or, leave unfrosted and top each serving with sliced strawberries and whipped cream.

Followed recipe exactly Suggestion: Aerate cake after baking and pour something wet over the top to moisten before frosting

I made this recipe for V-day used a heart shaped pan but the dimensions were the same and everything was the same except I cooked it for 35 minutes at 350 and it tasted fine any longer and it would have been dry.
